As the green chiles start turning red, it's time to celebrate New Mexico's other favorite food; Red Chile. Today we will create an entire menu of red chile goodies including: Red Chile Pork Tamales, Red Chile Sauce, Smoked Beef Chili, Eggplant Adovado, Red Chile Scalloped Potatoes and Vanilla Ice Cream with a Red Chile Caramel Sauce. This is an official Chile addicts 12-step program meeting. (Hands-On)
