The hollows along the cutting edge help reduce sticking and encourage food to release more easily from the blade, supporting a smooth, controlled cutting motion. Designed for thin, precise cuts, this santoku excels at slicing cucumbers and radishes paper-thin, portioning delicate fish, and making clean cuts through tender meats like prosciutto.
