Here's how it works: The lid traps steam during baking to replicate the environment of a steam-injected oven. This steam allows the bread to expand fully, and also creates a crisp, crackly crust. Holds a recipe with 3 to 4 cups of flour. 15" x 9" x 1½" (makes two 14¾" long loaves).
