Join our Cooking School Director, John Vollertsen as he takes you on a Culinary Journey!
John, affectionately called Chef V., grew up in Rochester, NY. After graduating in 1975 with a degree in Restaurant Management, Chef V. moved to New York City. While there he worked in Soho's "Greenstreet", Tribeca's "Odeon", as well as Larry Forgione's "An American Place."
The year 1985 moved Chef V. to the land down under, Sydney, Australia. There John worked for a Sydney company opening what became a chain of Southwest flavored restaurants known as "Arizona Bar and Grill".
While conducting research for this project, John visited Arizona and Santa Fe, NM quite a bit. As with most people, Santa Fe worked her charm and Chef V. settled here in 1998.
A one year stint as Cooking School Director for The Jane Butel Cooking School in Albuquerque lead to John's appreciation of and knowledge of the unique place food holds in the history and culture of New Mexico.
John joined the Las Cosas team in December 1998 and immediately developed a following with loyal store customers eager to learn new cooking skills and gain equipment use knowledge. As the word spread about the fun and entertainment our hands-on classes offer our roster of classes grew.
Every major chef in Santa Fe as well as neighboring Taos and Albuquerque, have joined us for our guest chef series.
Special event classes have included Actress Marsha Mason and British Chef Claire Lewis.

As an observer and commentator on the diverse culinary adventure his career has led him on, John continues to explore the wonderful world of food and shares that adventure with his students.
